3 medium green and/or red bell peppers, sliced 1/4-inch thick
1-1/2 medium yellow onions, halved and sliced
3 garlic cloves, minced
2 teaspoons Our Family® Italian seasoning
2 tablespoons Hunt’s® tomato paste
1 package (10 ounces) cherry tomatoes, halved
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
6 (6-inch) hoagie or sub buns
3/4 cup shredded Italian cheese blend
1.In large saucepot, cook sausage over medium-high heat 8 minutes, turning frequently to brown all sides. Stir in bell peppers and onions; cook 7 minutes or until peppers and onions are lightly browned, stirring occasionally. Add garlic and Italian seasoning; cook 1 minute, stirring frequently.
2.Stir in tomato paste; cook 1 minute. Stir in tomatoes; cook 1 minute. Stir in 1/2 cup water, scraping browned bits from bottom of saucepot with wooden spoon. Reduce heat to medium; simmer 15 minutes or until internal temperature of sausage reaches 160°, stirring occasionally. Remove from heat; stir in vinegar, salt and pepper.
3.Slice buns lengthwise in half but do not cut all the way through; fill with sausage, pepper mixture and cheese. Makes 6 heroes.
