2 tablespoons chopped cilantro
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 (24-ounce) bag frozen Banquet® chicken breast tenders
1/2 cup Healthy Choice® plant powered greener goddess dressing
1/4 cup sour cream
1 small avocado, peeled, pitted and sliced
1 cup shredded Colby Jack cheese
1/2 cup halved grape tomatoes
1/2 cup Our Family® frozen cut sweet corn, thawed
1.Preheat oven to 400°. Prepare rice as label directs; transfer to large bowl. Fold in cilantro, lime juice, salt and pepper. Makes about 3 cups.
2.Bake chicken as label directs; transfer to cutting board and coarsely chop. Makes about 2-1/2 cups.
3. In small bowl, stir dressing and sour cream. Makes about 3/4 cup.
4. Divide rice mixture into 4 bowls and drizzle with dressing mixture; top with avocado, cheese, tomatoes, corn and chicken.
