Quinoa Lettuce Wraps

Prep: 15 minutes plus cooling
Cook: 20 minutes • Serves: 4

1-1/2 cups dry quinoa
2 garlic cloves, minced
1/2 cup plus 2 tablespoons fresh lemon juice
3 tablespoons Our Family® Extra Virgin Olive Oil
1 teaspoon Our Family® Fine Sea Salt
1 cup chopped fresh Italian parsley
1/2 cup chopped English cucumber
1/2 cup drained and rinsed canned Our Family® Garbanzo Beans
1/2 cup shredded carrots
1/2 cup shredded red cabbage
1/4 cup Our Family® Roasted & Salted Sunflower Seeds
12 large butter lettuce leaves
1 medium avocado, peeled, pitted and chopped

1.Cook quinoa as label directs; transfer to medium bowl and cool. Makes about 4-1/2 cups.

2.In large bowl, whisk garlic, lemon juice, oil and salt; fold in parsley, cucumber, beans, carrots, cabbage, sunflower seeds and quinoa. Makes about 6 cups.

3.Serve quinoa mixture in lettuce leaves topped with avocado.
