Grilled Chicken, Mango & Avocado Lettuce Wraps
Prep: 15 minutes plus standing
Grill: 15 minutes • Serves: 8
1/2 tablespoon Our Family® 100% Pure Olive Oil
1/4 teaspoon Our Family® Coarse Kosher Sea Salt
1/4 teaspoon ground Finest Reserve™ by Our Family® Black Peppercorn Grinder
1 large mango, peeled, seeded and cut into large pieces
1 large avocado, peeled, pitted and chopped
1/2 cup chopped Our Family® Roasted & Salted Whole Cashews
1/2 cup Thai sweet chili sauce
1/4 cup chopped red onion
2 tablespoons chopped fresh cilantro plus additional for garnish (optional)
1 tablespoon fresh lime juice
24 large bibb lettuce leaves
1.Prepare outdoor grill for direct grilling over medium-high heat. Coat both sides of chicken with oil; sprinkle with salt and pepper. Place chicken on hot grill rack; cover and cook 15 minutes or until internal temperature reaches 165°, turning once. During last 5 minutes of cooking, place mango on hot grill rack; cover and cook 5 minutes or until grill marks appear, turning once. Transfer chicken and mango to cutting board; let stand 5 minutes. Chop chicken and mango.
2.Transfer chicken and mango to large bowl; fold in avocado, cashews, sauce, onion, cilantro and lime juice. Makes about 5 cups chicken mixture.
3.Create 8 stacks of 3 lettuce leaves each; fill with chicken mixture and garnish with cilantro, if desired. Makes 8 lettuce wraps.
