Greek Chicken Tostadas

Prep: 15 minutes
Bake: 8 minutes • Serves: 4

8 (6-inch) baked corn tostada shells
1 cup Fresh & Finest by Our Family® Roasted Red Pepper Hummus
2 cups shredded rotisserie chicken breast meat
1/2 cup Our Family® Feta Cheese Crumbles
1/2 cup finely chopped baby spinach
1/4 cup finely chopped cucumber
1/4 cup finely chopped refrigerated peeled and steamed baby beets
1/4 cup finely chopped red onion
1/4 cup Our Family® Plain Nonfat Greek Yogurt
Fresh dill and/or lemon wedges for garnish (optional)

1.Preheat oven to 425°. On 2 rimmed baking pans, place tostada shells in single layer; spread with hummus. Top hummus with chicken and cheese; bake 8 minutes or until lightly browned.

2.In small bowl, stir spinach, cucumber, beets and onion. Makes about 1 1/4 cups.

3.Serve tostadas topped with spinach mixture and yogurt garnished with dill and/or lemon wedges, if desired.
