Charred Snap Peas with Shallots & Burrata

Cook: 8 minutes • Serves: 4

1 package (8 ounces) burrata cheese, drained and torn into 1-inch pieces
2 tablespoons Our Family® Extra Virgin Olive Oil
1-1/2teaspoons white balsamic vinegar
1/2 teaspoon Our Family® Coarse Kosher Salt
1/2 teaspoon ground Finest Reserve™ by Our Family® Black Peppercorn Grinder
1 pound sugar snap peas, ends trimmed
1/2 small shallot, thinly sliced
Chopped fresh mint for garnish (optional)

1.In medium bowl, stir cheese, 1 tablespoon oil, vinegar, and 1/4 teaspoon each salt and pepper. Makes about 1 1/2 cups cheese mixture.

2.In large bowl, toss snap peas, and remaining 1 tablespoon oil, and 1/4 teaspoon each salt and pepper. Heat large cast-iron skillet over high heat. In 2 batches, add snap peas in single layer; cook 4 minutes or until charred and tender-crisp, stirring once halfway through cooking. Makes about 3 cups snap peas.

3.Spread cheese mixture over medium serving platter; top with snap peas and shallots, and garnish with mint, if desired.
