Black Bean Jalapeño Poppers

Prep: 20 minutes
Bake: 15 minutes • serves 8

1/2 plus 1 tablespoon grated queso Cotija cheese
2 tablespoons Our Family® Plain Panko Bread Crumbs
1 teaspoon Our Family® 100% Pure Olive Oil
1 can (15.25 ounces) Our Family® Black Beans, drained and rinsed
1 package (8 ounces) Our Family® Neufchâtel cheese, softened
3 garlic cloves, minced
1-1/2 tablespoons fresh lime juice
1-1/2 teaspoons Our Family® Ground Cumin
8 large jalapeños, halved lengthwise and seeded

1.Preheat oven to 400°; line rimmed baking pan with parchment paper. In small bowl, stir 1 tablespoon Cotija cheese, bread crumbs and oil. Makes about 3 tablespoons bread crumb mixture.

2.In large bowl, stir beans, Neufchâtel cheese, garlic, lime juice, cumin and remaining 1/2 cup Cotija cheese. Makes about 2 cups Neufchâtel mixture.

3.Place jalapeños, cut side up, on prepared pan; fill with Neufchâtel mixture and sprinkle with bread crumb mixture. Bake jalapeños 15 minutes or until filling is heated through and top is golden brown. Makes 16 poppers.
