Tuna Melt Quesadillas

Cook: 12 minutes • Serves: 6

3 cans (5 ounces each) Our Family® Solid White Albacore Tuna in Water, drained
1/4 cup finely chopped red onion
1/4 cup reduced fat olive oil mayonnaise
3 tablespoons drained and finely chopped Our Family® Hot Sliced Jalapeños
3 tablespoons Our Family® Plain Nonfat Greek Yogurt
1 tablespoon fresh lemon juice
1 tablespoon packed chopped fresh cilantro
1/2 teaspoon ground Finest Reserve™ by Our Family® Black Peppercorn Grinder
1 can (15.5 ounces) Our Family® Cannellini Beans, drained and rinsed
6 slices Our Family® Sharp Cheddar Cheese
3/4 cup chopped vine-ripened tomatoes
6 Our Family® Soft Taco Style Wheat Tortillas
1-1/2 tablespoons Our Family® Olive Oil

1.In large bowl, flake tuna with fork. Stir in onion, mayonnaise, jalapeños, yogurt, lemon juice, cilantro and black pepper; fold in beans. Makes about 2-1/2 cups tuna mixture.

2.Divide tuna mixture, cheese and tomatoes over 3 tortillas; top with remaining 3 tortillas. In 3 batches, in large skillet, heat 1/2 tablespoon oil over medium-low heat; add 1 quesadilla and cook 4 minutes or until golden brown, turning once. Makes 3 quesadillas.

3.Cut each quesadilla into 6 wedges.
