\nSouthwest Tortilla Pizzas<\/span><\/p>\n

\nBake: 8 minutes \u2022 Serves: 4<\/span> <\/p>\n

2<\/span>tablespoons Bertolli\u00ae olive oil<\/strong>
\n2\t<\/span>medium tomatoes, chopped
\n1\/2 <\/span>small white onion, finely chopped (about 1\/2 cup)
\n1-1\/2 <\/span>packages (10.8 ounces each) frozen Birds Eye\u00ae Steamfresh gold & white corn<\/strong>
\n1\/4 <\/span>teaspoon salt
\n3\t<\/span>tablespoons drained and chopped sliced jalape\u00f1os
\n1\/2 <\/span>cup Martin’s sour cream<\/strong>
\n1\/4 <\/span>cup enchilada sauce
\n2\t<\/span>cans (15 ounces each) Our Family\u00ae black beans<\/strong>, drained, 1\/4 cup drained liquid reserved
\n4\t<\/span>(8-inch) flour tortillas
\n2\t<\/span>cups finely shredded Cheddar Jack cheese
\n1\/2 <\/span>cup chopped fresh cilantro <\/p>\n<\/div>\n

1.<\/span> Adjust 2 oven racks to top and bottom position; preheat oven to 400\u00b0. In large nonstick skillet, heat oil over medium-high heat. Add tomatoes, onion, corn and salt; cook 5 minutes, stirring occasionally. Stir in jalape\u00f1os.
\n<\/span><\/p>\n

2.<\/span> In small bowl, stir sour cream and enchilada sauce. In medium bowl, coarsely mash beans with reserved liquid.
\n<\/span><\/p>\n

3.<\/span> Place tortillas in single layer on 2 rimmed baking pans. Spread each tortilla with about 1\/2 cup beans; top with corn mixture and cheese.
\n<\/span><\/p>\n

4.<\/span> Bake pizzas 8 minutes or until cheese melts and tortillas are crisp, rotating pans between upper and lower racks halfway through baking. Cut each pizza into 6 wedges; drizzle with sour cream mixture and sprinkle with cilantro. Makes 4 pizzas.
